Chicken & Stuff

Quick, easy & flavorful.

We eat a fair amount of chicken, so I'm always concocting something or another. This time it's chicken breast cooked in olive oil with a medium onion chopped, 6 garlic cloves pressed, a bunch of fresh French tarragon, some fresh basil, a little spinach, a yellow pepper, salt & pepper. I also used about a tbs of fennel seed because I like it with pasta. Some pasta and a little grating cheese & it's dinner. If you don't eat meat, it's a good accompaniment with pasta alone.

Fennel is not for me either but that looks really good!

I don't like licorice AT ALL but reading your cooking posts I'm not surprise your son is a chef! This sounds really yummy ~minus licoricy things of course. ;)

I think food is really hard to photograph. Sometimes it works and other times it is not so good.

I like licorice and I really like fennel. I wonder, if you anti-fennelites ate here, would you know and would you still not like it? Just a little thought!

oh yum, but dearest wouldn't let me eat it with all that garlic. apparently I secrete it for days - doesn't bother me :)

Dearest should never keep a woman from her garlic. It's wrong, wrong, wrong. I have an entire bed of garlic growing and Mark would not dare to utter, it's me or the garlic. Mark who?

Anything with tons of garlic is super good for me! I once ate a garlic salad with 40 cloves. It was good but I sweat, breathed, and smelled like garlic for days! I also like the tarragon you've added...it sounds really good. You must be one of those just throw it together and it comes out gourmet!

I think the key is flavor, and color. I am low on food in the house and used what I had. I grow tarragon and basil so that's out the back door! I often use pasta as a side. My good friends garlic and onion never fail me.

40 cloves of garlic, you are my hero!

I love that licorice flavor but it took me time to develop the taste for it : ) I am going to try this one out for sure! I have been having computer glitches but this morning I was able to catch up on all you posts. We will travel to the states this month but I hope to reenter blogging world when I get back! My computer will take a trip to the doctor while we are state side and hopefully I will be up and running again. Your rhubarb cake also looks delicious.

This is sounding really good right about now. :) I love pasta and chicken, so I'll have to try this soon. My mom would prob like the fennel, but not me. I'm not a licorice fan. LOL Now garlic is an entirely different story -- you can never put too much garlic in a dish. But 40 cloves?! Oh my!!
