Hm, Hm, Good!

Grilled Eggplant Sandwich For A Sunday Lunch.

This is absolutely delicious. It's eggplant brushed with an olive oil/garlic./salt/pepper/basil infusion. Grill the eggplant slices. Mix cream cheese or goat cheese with basil/salt/pepper and spread on flat bread. I grilled a couple of thick-sliced tomatoes and topped with spinach leaves.
GOOD!

Served with chilled white wine, sounds wonderful. I'll be there next wkend.

I've had fried egg plant, and egg plant in pasta, but never on a sandwich.

We have just about worn out your Roasted Eggplant soup that you posted about and we ate it every week for several months!!! Now something new to do with Eggplant, hurray!

Britwife, I think the Kalamata olive oil is what made this simply pop with flavor.
