Hm, Hm, Good!

Grilled Eggplant Sandwich For A Sunday Lunch.

This is absolutely delicious. It's eggplant brushed with an olive oil/garlic./salt/pepper/basil infusion. Grill the eggplant slices. Mix cream cheese or goat cheese with basil/salt/pepper and spread on flat bread. I grilled a couple of thick-sliced tomatoes and topped with spinach leaves.
GOOD!

    I've had fried egg plant, and egg plant in pasta, but never on a sandwich.

  6. We have just about worn out your Roasted Eggplant soup that you posted about and we ate it every week for several months!!! Now something new to do with Eggplant, hurray!

I really appreciate the concept and sentiment behind awards, but I cannot participate in them anymore. I have too may and I have not got the time to devote to participating properly.
