Post Election Hangover

Yesterday I was worn out and edgy. I found it difficult to work and almost impossible to concentrate. I called my friend Jean L. regarding a horse and ended up heatedly going on about a topic like a firebrand! All day I was on edge.

I had an election season hangover. The past couple of months have been very intense for me and I have been tightly wound. I think it took a day to detox. : )

Maybe now I will go back to my usual sweet self. : ) : ) : )

I think I my be experiencing similar symptoms! I have been feeling kind of stressed out lately, today is a rainy day, the election tension is gone, and I am feeling a little grumpy : ). Soooooo... today Sienna and I are going to make this special treat to nibble on with some Black Tea and cream.

I included the recipe below. So if you need some perking up these usually do the trick for us : )
I am also going to make a simple cream cheese frosting to dip them in YUM!


Post Election Hangover Ginger Snaps: )

Ingredients:

2 3/4 cups self-rising flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1 cup brown sugar, packed
3/4 cup margarine or butter, softened
1 egg
1/4 cup light molasses

Preparation:

Combine flour, soda, and spices in a bowl and set aside. Cream sugar and margarine. Beat in egg and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 2 hours or more. Preheat oven to 375 degrees.
Shape dough into 3/4-inch balls, roll in granulated sugar, and place on lightly greased baking sheets about 2 inches apart. Flatten each ball with the bottom of a glass dipped in sugar. Bake about 8 to 10 minutes, until set.
Makes 8 dozen cookies.

I have all of the ingredients on hand, so maybe I'll give it a try this afternoon.
