We are having a few cold days before it jumps back up again. I don't like the up and down. The weather gods do not care about what I like nor do not like. Meanies. We did have light snow overnight. Winter is my favorite food time of the year, so I will be posting too many photos.
A friend made Giada De Laurentiis' sheet pan lasagna and told me he liked it. I decided to give it a try. I recommend it, it's simple and fast to put together and only takes about thirty minutes in a hot oven to bake. It can be prepped ahead of time, which I did, making dinner ready in a half hour. I used no boil lasagna noodles and didn't bother wilting the spinach, the heat and steam in the oven does that just fine. Give it a try.
Yesterday was an errand day. I ordered and picked up groceries. Mark took my truck into the tire place. It has dual rear tires and needs to be taken in periodically to check air pressure. The outside rear tire has to be removed to get to the inside tire. It's well worth having the experts do this.
We are both trying to live in the moment, not thinking beyond now. For good reason.

The lasagna looks delicious. I have some no bake noodles. I wonder if I could use frozen spinach. I am trying to clean out the freezer. This might be just the ticket!

My friend used frozen spinach, just squeezed out the water, Miss Merry. It's quite good.
I made a budget version, using what I happened to have! I used up the last few noodles in the box, high time, they were practically antiques. All in my little glass pan that fits in the toaster oven. Thanks for the idea. Mine made two helpings.
It's easy and good, isn't it, Boud. I also had antique noodles, imagine that!
I also do not like it when the weather is up & down like a yoyo also I do like lasagna but have never made it
The food looks good. These days are weirdly foggy right now. I don't remember this from other years.
Looks good but neither of us like ricotta...so we use Mozzarella :0 Real cold out today -40 windchills they say...I am not going out to find out. Tomorrow is soon enough for me.

We're back to cold (-2 right now with -23 wind chill at 4pm) and aren't expecting any real warm up any time soon, I guess. Wonderful weather for lasagna!! Yummmm! :)
