We have another rainy day today and part of tomorrow. We really need it, so no complaints from here. Everything is greening up and sprouting. I made soup for our rainy weather lunches. Soup is always good, but soup on dreary, wet days is even better. Roasted eggplant soup with feta. I roasted the vegetables last autumn and froze them. It isn't pretty but really good. Feta crumbles or goat cheese sprinkles.....perfect. A repeat for lunch today.
Otherwise, all is quiet on the West Metro front. This once was a very rare and appreciated state. Quiet. There was always something with the equines. I'm not complaining, mind you. I'm not up for the stress I lived with back in the day. It is normal when you are living it. When not, it makes a person wonder about their own sanity. Horse obsession and sanity do not keep company with one another. They and we are now oldsters not too interested in youthful drama. Well, they still have some interest.

I do love ordinary days. I had plenty of drama for most of my life and am grateful for the peace and quiet of these last many years...even with the recent cancer life was calm and quiet. ;) Soup is delicious on a chilly, wet day.
Boud, I feel better. I'd like to get more better, but this is where I am right now. Horses, horse owners....made for drama. Add in baby horses and you've got a party!
Soup is good anytime, but these dreary days are made for it.

Rita, as a new person to your blog I didn't know about the cancer. I do hope everything is ok. No drama is a good thing. I also had a life of drama, I think I had something to do with that!

The soup sounds (and looks) great! In spite of all the work....I'm sure you must still love your horses. Hope you are able to visit them often now that you are on the upswing.

Soup looks good. I made my occasional and standard meat loaf yesterday, and Sue roasted somewhat blackened carrots, which is the wat that I like 'em.

AC, that's something I haven't made in awhile and something I like. Blackened carrots sound like something I may like, too.
Soup would have been perfect today! It is rainy, windy, and kind of cold-ish. I think chicken noodle would have been a great lunch.
No drama back here in the woods to speak of.
I think as we grow older we can sometimes chose the drama we allow to be around us.
My mother at 85 was escorted out of a Senior Center a few years ago by a Sheriff's Deputy... LOL. That woman still makes drama where ever she goes!

Raining here too, we have health care drama a plenty around here. Gene is back in the hospital, hopefully not for long.

Roasted eggplant soup was a surprise because I was thinking you had made tomato soup from looking at the photo first and not reading. Leftovers must go well with that freshly baked bread in a more recent post.
Dorothy, it's made with roasted eggplant, tomatoes, onion and garlic. So it could be called roasted tomato soup!
