It's going to be unseasonably warm today, a high of 80F/27C. The kitchen doors will be open, one to the screened porch, which makes the kitties very happy. Happy kitties, happy two-leggers.

This is the result of a 20 hour ferment of whole grain bread dough.


                                              Spelt                       Light Caraway Rye

I'm really pleased with it, lots of air in the crumb, especially for spelt. I bake the loaves in a dutch oven at high temperature for about 35 minutes. Mark tells me he doesn't like rye bread, he has said this for years. I make rye bread and don't tell him it's rye. He always says "this is good". Sneaky. When my son was small he loved tomato soup and clam soup.The reason he loved them is I called them red soup and white soup. I may have been born sneaky.

It's all in the presentation. My late husband used to insist brown eggs tasted better than white. I often put a drop of coffee in the egg boiling water, and he enjoyed his "brown" egg..

They look wonderful. Could it be that he doesn't like the caraway sometimes found in rye? Love me some spelt. It is my go-to flour. And the one flour that I never want to be without. Your bakes look wonderful. Happy Weekend. Happy Baking.

Far Side, the bread is good. I despise the summers we have been having. If I wanted Florida humidity I'd live there!

Ivy, he just has it in his head that he doesn't like it. His taste says differently! This bread has caraway and he likes it. I started using spelt, buckwheat and einkorn when I thought my gut problems were related to gluten. Turns out it was my well water. I have continued using these because I like them. I enjoy making bread.

e, today is low 70s. Much better! Man may not be able to live on bread alone but this woman sure could!

My exhusband used to tell the kids that water was tap juice and milk was cow pop. It worked well.

That's funny about the rye. Glad you figured out that it was the water. Sprouted brown spelt has been my go to for many, many, many years. The white spelt is good to bake with as well. Glad you kept it. So fun!

Yikes, that is a very warm temp and we've only reached the high 60s here in Nashua, NH. Lately, the weather has been epeating...rain and wind, than a do over. Those bread loaves look wonderful, Sandra, and I will be making a rye loaf again as the recent one was well received here. The only issue is that we are trying to cut back on bread eating, but homemade is just so darn good!

Dorothy, the bread is good. I usually have toast in the morning and often a sandwich at lunch. That's my bread for the day.

My sinus problem is much better, thanks.

Ivy, we had to put in a reverse osmosis system for drinking water.
