The Black McCool has taken over the house. He is a large fellow and he seems to know it. Gatto gives him space.
I have told myself I will make bread today. Enough of this ennui, I can mix dough. I also found out why the creme fraiche I've recently made doesn't thicken much. It seems most cream is now ultra pasteurized, which keeps it from working well in things like ricotta, etc. The ultra pasteurized has a longer shelf life. Now I have to find the regular stuff. Sigh. The magnitude of my troubles just keeps growing. Ah, well.....

I used to work in our extension office. Everyone wanted to know why their home canned tomatoes spoiled when they use the same method as their gramma and mother did. Well, what changed is the tomatoes. They have been bred and rebred to be less acidic. And you need the acid if you are going to water bath process them. So you need to add lemon juice or another acid in the amount recommended by the USDA. Not your fault, not gramma's fault. It is the tomatoes. And I would not even trust "heirloom" tomatoes because what generation in the DNA acid test are they?
I had no idea I need to watch out for the composition of cream, lol.
My husband has started on a bread making journey and now he is the one taking over the kitchen and oven to try different recipes. He hasn't yet found one he is particularly fond of so he keeps "practicing" and we manage to eat the failures.
Beautiful boy. Will you share the cream with him if you find it?
I had no idea that cream was ultra pasteurized. But there you go, I once in a while may buy it for something but can't recall the last time I did.

Miss Merry, I didn't know this. That's unreal problem for canners. I have found one place that sells one just pasteurized cream. Of course it's about 25 minutes away!
The bread I made, Dorothy, was something I saw on a video. It needs some adjustments! How lucky you are to have someone making bread.

Val, I didn't pay any attention, but there it is on the container, in large letters. Also on the half&half. I never paid attention.
