Talk Chicken

I love roasted chicken. Honestly, chicken in any form is A-okay by me. My neighbor had chickens that I cared for, more often than I liked, when they would go out of town. She also had lambs and later added Alpacas. They can be contrary creatures, chickens, and often resent the egg collector. I called them peckers and mother-cluckers. I'm glad I never knew what they called me. The neighbor sold to her son three years ago so I no longer have that obligation.

I roasted a chicken on Valentine's Day. I thought I'd post the before roasting photo, for no other reason than my repertoire is limited at the moment. How do you season yours? I don't eat the skin so I found a long time ago that I missed the flavor of the seasoning. I mix salt, pepper and whatever herbs/spices I'm using in a small bowl. I go under the skin and rub it all over, getting as much as I can into the leg. Then I place butter under the skin. I roast it atop vegetables, this time fennel, garlic and thickly sliced onion, place potatoes, onion and carrots, if I'm using them, all around the chicken, topping it off with more seasoning, this time tarragon, some butter and a drizzle of olive oil. There you go, my chicken recipe!


 Chicken 101

We have two more young cats hanging around. I'm feeding them. Cats do not have it easy. It makes me sad and mad. That's all I can say.

From chicken to cats, a muddled mind! I didn't sleep well last night, that's my excuse. We have mild weather for a couple of days, if the forecast holds true we are going to get a lot of snow mid-week. It's also supposed to become cold again. Comfort food will be on the menu. Mark needs to get me manicotti tubes. He will.

Yes, I'm tired. I am not a nap-taker but one may be in my future today. I would not be safe operating heavy equipment. Maybe not even a gas cooktop. Be warm and nap if you need to. Why not.

Oh, no! Poor kitties, cruel people. I wish them consequences for their cruelty and may these people suffer the same hardships as the animals they abandon.
You are kind to feed the unwanted cats or whatever shows up at your
door.

Kaye, cats showing up is on the uptick lately. Decades of this wears on a person.

Hope you get your rest and get a good night's sleep. I'm getting everything done at our place tomorrow as the rest of the week does look wicked.

Yummy chicken! I never learned how to make it tasty though. I was able to make chicken that even the dogs refused!

Val, try making a chicken this way. It works well. That must have been some chicken if the dogs refused it!

I think it will be an early night. I'm going to reschedule my dr appt. It's on the worst day of the predicted storm. Hunker down, make light boxes.

I've never been a cat person. My mom made me afraid of them as a child and I never really got past that. My daughter and her husband live with us and they brought the little cat that belonged to him first and now is theirs. He adopted her as a very small kitten from a no-kill shelter. She had a broken leg and other injuries when she was brought in. Had suffered abuse at the hands of a very large man.

What the hell is wrong with people? How can someone dump an animal or abuse one? I don't understand it.

Pixel's skittish if you approach her directly, but if you point your feet to the side and speak to her, she doesn't run. She's a gentle creature, and will immediately purr and rub her little head on you if you pick her up. I admit I've fallen in love with this particular kitty, but still can't consider myself a cat person.

I find the better the chicken the better the flavor no matter what the cook does to it. I loved the chicken I got recently from misfits market. I don't eat the skin either, but salt, sage leaves and old Bay are good. Butter don't hoit either!

Hello from North Idaho. I do like chicken in a lot of ways. On the way to town I suggest Chicken Noodle soup, homemade of course. On your left side of your blog. Sure have some nice looking Arabians.
I stop over from Bohemian Valhalla.

I'm with you about chicken. Yum. And I bet the sauce made with the yellow tomatoes was delicious too. Do we see two more kitties in your life?

If I recall correctly, that chicken was an old hen that should have been made into soup or not even eaten at all. Just a tough old bird. However, I tried!

I have leftover breasts in the freezer. The weather forecast is looking iffy, so maybe we'll have chicken soup later this week.

Ami, if we new the answer to what the hell is wrong with people we might win the Nobel. Or, as a specifies, we have a segment with degenerative brains.

Gatto doesn't like a hand coming directly at his face. Poor Pixel, that kind of trauma always stays just below the surface.

Lori, the sauce wasn't photograph material but it was really good.

If I can get to them I'll probably take them to cat rescue. I have six cats right now. They are young.

Your food always looks good. I've never tried fennel but you may have convinced me.

I'm reading another book right now which you might find interesting, "Breath" by James Nestor. I'm practicing the breathing exercise and I'll let you know the results.

Do you have a recipe that you might share for the manicotti?

Pixie, fennel has the flavor similar to tarragon, sort of anise-like. It's good raw in salads, cooked it is much milder. I use the stalks like celery and the fronds for pesto. There's no waste. Even the outside part and core go in my stock bits bag.

Let me know what you think of the book. Did you recommend Bewilderment? At first I wasn't sure but then I was pulled in.

Yes, when I get it made I will post a photo along with Mrs. Mancuso's recipe.
