It's a Wednesday


Yesterday I made chicken stock.


Today I will use part of it for roasted eggplant soup.


The forward thinking me roasted ingredients for the soup last autumn and put it in the freezer. I defrosted it and it's ready to turn into soup. Mark is picking up an Aldi order on his way home from radiation that contains goat cheese, which is so good crumbled into the bowl of soup.

The equines finally got to go outside this morning. It was -6 F and is going into the teens so the water buckets shouldn't freeze solid. The poor beasties get used as a furnace when it gets too cold. They themselves do fine in cold weather. They were mannerly critters, no rodeo show today.

Mark's last day of treatment is the thirteenth, the next day Gatto goes in to get his male parts snipped. THAT cannot come soon enough. A friend asked me if I planned to neuter Gatto. I told him no intact males were allowed in this house. He told me Mark had better run! You gotta love friends.

I think it's arrivederci time. 👋🏼

Yum that food looks great. I'm angling towards a soup this weekend because I don't want to keep thinking up nice meals. Most of my nice soups have dehydrated veggies tossed in & those yummy tomatoes!

If I make a huge pot, we just eat it for two days and that might be a good way to make the other half eat his veggies!

That's funny on the male parts snipped. That sure made me laugh.

I'd be a bit worried in Mark's place! How clever of you to think ahead and roast the vegs. I'm making a veggie stock today so I can soup up again when my Misfits comes tomorrow. I agree it's a great way to get vegs when you're not up to scratch cooking.

We are exactly the same weather in Colorado at the moment. It was actually above 0 this morning, however. I found out when I moved here that the ranchers worry a lot about their cattle getting pneumonia in long stretches of cold like this. Not because of the cold exactly but because the cows will get up against the nearest thing that will block the wind and stay there for so long not moving that they get sick. So the ranchers try to move their feed far away from them so that they have to walk to get their food and that seems to help. I think ranchers and farmers are sooooo smart and have to be in order to successfully do what they do.

That stock looks so rich. We are going to get some of your weather Thursday pm-Saturday am. Minus 20 with the wind. Our water buckets had ice on them this morning. I have a heater in the water trough.

Val, I have one more meal of the soup. I have enough stock to make another pot of soup. My friend was funny with his comment on Mark. I used some of the dried tomatoes with an egg dish awhile ago. I'm so glad you got me into dehydrating.

Boud, my horse vet told me once that women get just a little too enthusiastic when they talk about gelding the colts!

I love soup. This soup is made with roasted eggplant, tomatoes, onion and garlic. I'm thinking about a stir fry after seeing yours.

Pixie, sacrilege! Mark was not a fan of soup, he used to say it isn't food. I have turned him, though. He isn't a fan of broth soup, he prefers the thicker type. More of a stoup guy.

The horses do well inside but are happy to get out.

Peace Thyme, I didn't know that about cows. Horses grow a heavy winter coat. The outer layer will stand on end when it's cold and windy, acting as insulation. They will turn their backs to the wind and put their heads down. I have round bales in the paddocks so they can eat nonstop if they want. Digesting hay generates body warmth.

Lori, I had a lotto bones and scraps in the pot! I have tank heaters in the troughs. The auxiliary barn has an outlet at each stall so there are heated buckets in there, but I don't use that barn anymore, there are only 6 stalls in there. Hot water used to be my answer, now it's warm horse bodies! I'm glad for you to have your kitchen fireplace up and running. It will make the cold days much more pleasant!

Looks delicious... I'm sure being done with the Treatments is going to help with appetite. The Beasties being okay with the weather is enviable...us Humans are so delicate.LOL...Dawn the Bohemian

That looks so good! My culinary feat for the day was cereal, a sandwich and fish sticks and salad...some days I embarrass myself. I hope you are both feeling decent today. Ever read a novel called Horse by Gwendolyn Brooks?

I agree no intact males in the house! Supposed to be warmer on Saturday so only a few more days to go in the deep freeze.

Dawn, they do know how to adjust. Mine are barn babies, though. Late afternoon they line up to come in!

e, some days we have frozen pizza! I have not read nor heard off it, but I looked it up on the library site and put it on hold. It's 19 weeks out. Thanks!

Far Side, we agree! Tomorrow is supposed to be brutal with the wind. Then it moderates. That's
what my app says.
